Rachel is a lifelong resident of Baltimore, MD. Her background is diverse-she has a BA in Urban History from the University of Baltimore and MA in Education from UMBC but her true love is food.
She started the award winning food blog Coconut & Lime in 2004 to share recipes with her friends. In the years since it has grown into a respected source of original, inventive recipes with fans all over the world. MSN’s Delish.com named Coconut & Lime one of the top 50 food blogs in the world.
“Hers is one of the few food blogs on the Web that features only original recipes. And there’s no pretentious foodspeak. She’s as down-to-earth as that other Rachael who cooks— her ingredients are mostly items you can pull from your cupboards and her recipes aren’t complicated or time-consuming— but not so annoyingly perky. ” - Style Magazine, Nov. 2007
Following the success of her blog, Rachel has become a popular food writer and commentator appearing in a wide range of online and print publications, webcasts, television and radio.
Rachel’s first cookbook, the Everything Healthy Slow Cooker Cookbook , features 300 recipes from a wide range of cuisines.
It is shipping out now from Amazon.com and is available in bookstores worldwide.
Her second book, the Everything Whole Foods Cookbook is available now from Amazon and bookstores worldwide. It includes 300 new recipes and a color photo insert. It is also available for the Kindle.
